Preserving the flavor and aroma of the flour, the Japanese flour used in Jimbei's super thick noodles is ground in a stone mill. The manager is obsessive about the quality and texture of the noodles, which go so well with the pork bone, bonito and fish based dipping sauce that is simmered for 48 hours prior to use.
